Can I use fresh pineapple instead of canned in recipes?
You can use fresh pineapple instead of canned in many pineapple recipes as long as you cut it into similarly-sized pieces before using it. Canned pineapple has been lightly cooked, making it a little softer than fresh, but in baked recipes the difference won’t be noticeable. If your fresh pineapple is more tart than sweet, a touch of sugar or honey can balance the flavor. Fresh pineapple also works well in chilled desserts like ambrosia salad where the chunks retain their shape.
What no-bake desserts can I make with pineapple?
Pineapple tastes great in creamy or frozen no-bake desserts, like popsicles, icebox cakes and fluffy pies. Combine leftover rice, canned pineapple and whipped cream for an easy pineapple rice pudding. You can also layer fresh pineapple with yogurt, berries and nuts for refreshing breakfast parfaits that double as dessert. For jiggly desserts, just remember one of our top tips when using gelatin: stick to canned pineapple as the enzymes in fresh will prevent it from setting.
How do I store pineapple desserts to keep them fresh?
Store pineapple desserts in tightly sealed containers in the refrigerator, especially any desserts with creamy fillings, for three to four days. For sticky bars like coconut-pineapple rhubarb bars, add a layer of parchment or waxed paper between pieces to keep them separate. Cakes and cookies can be wrapped well or transferred to freezer-proof containers and frozen for six to eight months.
