Don’t be fooled by the name—there’s nothing impossible about impossible cheeseburger pie! It’s actually one of the most straight-forward suppers you can make. It has a tender, biscuit-like crust filled with savory ground beef and cheese, and takes only 40 minutes from start to finish.
The first impossible pie—a creamy coconut pie—appeared in the 1970s. Thanks to Bisquick baking mix added to the filling mixture, it made its own crust. Over the next few decades, Bisquick introduced more sweet and savory impossible pie recipes with self-forming crusts, and today the recipes are branded on the company’s website as “impossibly easy” pies.
This impossible cheeseburger pie recipe is a favorite of mine because it’s always a hit when I serve it up for dinner. It has that classic cheeseburger flavor thanks to ketchup and mustard in the filling. And like a cheeseburger, you can make it your own by mixing in “toppings” like bacon, tomatoes and pickles.
Ingredients for Impossible Cheeseburger Pie
- Biscuit baking mix: You can stock your pantry with store-bought Bisquick mix or whip up a six-ingredient homemade baking mix. It lasts in the freezer for for up to six months.
- Ground beef: When there’s some meat waiting in the fridge or freezer, recipes that call for a pound of ground beef (like this one!) are weeknight dinner lifesavers.
- Sauce: Blend up pantry staples—ketchup, mustard, garlic powder, salt and pepper—to create a savory sauce for the meat.
- Onion: When you know how to chop onions the right way, it gets easier and easier—and with fewer tears.
- Egg: Cracking eggs on the counter helps prevent any bits of shell from getting in the bowl.
- Milk: If there’s no whole milk on hand, milk substitutes like half-and-half cream, evaporated milk or sour cream can save you.
- Cheddar cheese: Bagged shredded cheese will do in a pinch, but grating your own cheese will give you a smoother melt.
- Toppings: Add optional burger toppings to individual slices of cheeseburger pie. We recommend diced tomatoes, shredded lettuce and sliced pickles.
Directions
Step 1: Make the beef layer

Preheat the oven to 400°F. In a large skillet, cook the ground beef and chopped onion over medium heat. Cook them until the beef is no longer pink, breaking it into crumbles. Drain off the excess grease.

Stir in the ketchup, mustard, garlic powder, salt and pepper. Transfer the beef mixture to a greased 9-inch pie plate. Sprinkle the shredded cheese over the top.
Step 2: Make the biscuit layer

In a large bowl, combine the egg and milk. Add the biscuit mix and stir until it’s just combined. Pour this batter over the cheese and beef layer.
Step 3: Bake the pie
Bake the pie until a knife inserted into the center comes out clean, about 22 to 25 minutes. Slice and serve the pie with optional toppings like tomatoes, lettuce and pickles.

Recipe Variations
- Change up the cheese: Cheddar works well in this pie, but so do pepper Jack, Swiss, provolone and Parmesan.
- Make it with turkey: Substitute ground turkey for the beef, adding a little oil to the pan to keep the meat moist as it browns.
- Add peppers to the biscuit mixture: Mixed canned green chiles or chopped jalapenos to the baking mix dough.
- Make it better with bacon: Mix cooked and diced smoked bacon into the beef mixture.
How to Store Impossible Cheeseburger Pie
I love leftover slices of impossible cheeseburger pie almost more than I like freshly baked ones. Wrap the impossible pie in the pie plate well with food storage wrap, or transfer slices to tightly-covered food storage containers. Store the pie in the fridge for up to four days.
