Ingredients for Chicken Caesar Smash Tacos

- Flour tortillas: Small 6-inch flour tortillas are the ideal base for smash tacos. They’re easy to press into the skillet, crisp up quickly and stay sturdy enough to hold all the toppings without turning floppy.
- Cheese: Shredded mozzarella melts into an ooey-gooey layer over the seasoned chicken, while grated Parmesan adds a salty Caesar-style finish.
- Bread crumbs: Be sure to use dry bread crumbs here, not fresh. Dry crumbs will toast up perfectly golden and crunchy for a crouton-style taco topping.
- Caesar dressing: Our creamy homemade Caesar dressing starts with plain Greek yogurt. Grated Parmesan, olive oil, Worcestershire sauce, anchovy paste and Dijon mustard build classic, bold flavor. If you’re short on time, make the dressing ahead and keep it in the fridge, or swap in your favorite bottled Caesar.
Directions
Step 1: Season the chicken
In a large bowl, combine the ground chicken, Italian seasoning, garlic powder, onion powder, smoked paprika, salt and pepper. Mix until well combined, then divide into eight equal portions.
Step 2: Smash and cook the chicken tacos

Heat a drizzle of avocado oil in a large skillet over medium-high heat. Working in batches, spread one portion of the ground chicken mixture onto one tortilla. Place the tortilla in the skillet, chicken side down. Press firmly with a burger press or flat spatula until the chicken is about 1/4-inch thick. Cook until the chicken is browned and crisp, one to two minutes.
Step 3: Crisp the tortillas

Brush the top of the tortilla lightly with avocado oil, then flip the taco so the tortilla side is down in the skillet. Sprinkle the chicken with shredded mozzarella. Cook until the bottom of the tortilla is golden and crisp, about one minute longer. Repeat Steps 2 and 3 with the remaining tortillas and ground chicken.

Step 4: Make the bread crumb topping

Once all the tacos are cooked, melt 1 tablespoon of butter in the same skillet. Add the bread crumbs and stir to coat. Cook until golden and toasted, one to two minutes.
Editor’s Tip: Bread crumbs can go from toasted to burnt quickly, so keep stirring and pull the pan off the heat as soon as they turn golden brown.
Step 5: Make the dressing

In a large bowl, whisk together the Greek yogurt, grated Parmesan, olive oil, Worcestershire, anchovy paste, Dijon, salt and pepper until smooth. Portion out 1/2 cup of dressing and toss it with the romaine. Refrigerate the remaining dressing for another use.
Step 6: Assemble the tacos
Top each chicken smash taco with dressed romaine, toasted bread crumbs and a sprinkle of grated Parmesan. Serve immediately.

Can you use a different meat?
Yes! Ground chicken is the go-to for these Caesar smash tacos because it’s lean and mild, but you can easily swap in other proteins. Ground turkey is a simple substitute for chicken, or try ground beef or ground lamb for a richer, more savory flavor. If using red meat, opt for a leaner blend, like 90/10, to keep the tortillas from getting too greasy.
Can you grill or bake these smash tacos?
I wouldn’t recommend grilling or baking smash tacos. A skillet is best because it gives you direct and even contact with the heat. When you press the chicken into the tortilla, it needs that flat skillet surface to “smash” and brown quickly, creating the crispy, golden edges.
With a grill, you risk the chicken sticking or falling through the grates, while the oven cooks more gently and won’t give you the same crispness. That said, you could try a griddle or a flat-top if you want to cook several smash tacos at once.
