- Cottage cheese: You can choose any style or brand of cottage cheese to make cottage cheese flatbread. We tested the recipe using low-fat and full-fat varieties, and both turned out sublime.
- Eggs: Eggs are one of nature’s most perfect food sources. They’re jam-packed with protein and just about every essential vitamin, mineral and amino acid the human body requires to thrive.

Directions
Step 1: Prepare the pan
Preheat the oven to 350°F and line a quarter sheet pan (13×9 inches) with parchment paper. Lightly grease it with cooking spray and set it aside.
Step 2: Blend the ingredients

In a food processor or high-powered blender, combine the cottage cheese, eggs, salt, pepper, dried oregano and rosemary, and garlic powder. Blend them until they’re very smooth.
Step 3: Add the batter to the pan

Transfer the mixture to the prepared pan and spread it into an even layer.
Step 4: Bake and cool the flatbread

Bake the flatbread for 30 to 35 minutes or until the eggs are fully set and the edges are golden brown. Remove it from the oven and let it cool completely in the pan.
Use it immediately, or refrigerate it until you’re ready to use it.
Editor’s Tip: Do not attempt to remove or roll the flatbread while it is still warm, or it will tear.

Yes! For easier meal prep, you can double this cottage cheese flatbread recipe and spread the mixture evenly onto a parchment-lined half-sheet pan (roughly 18×13 inches). Bake as directed, increasing the cook time by up to five minutes to ensure the flatbread is fully baked. You could also divide the mixture between two quarter sheet pans.
We do not recommend baking more than one half sheet pan of flatbread at a time. In testing, we baked two half-sheet pans at once, rotating them halfway through, but the flatbreads did not achieve quite the same color or texture.
How can you make cottage cheese flatbread thicker or thinner?
You can make a cottage cheese flatbread thinner or thicker by adjusting the size of the pan or increasing the amount of batter. If you plan to make a cottage cheese flatbread pizza, you could make a thicker flatbread, but you’ll want to increase the bake time by a few minutes to ensure it gets a drier, bread-like texture and crisp edges.
For wraps, we don’t recommend straying too far from the recipe when adjusting the flatbread thickness. Any thinner and the flatbread will likely tear too easily. A thicker flatbread will also be difficult to wrap.
