If your cake roll still cracks, though, don’t get discouraged. It’s a very common occurrence, even when you feel as if you did everything right. It’s usually salvageable with a little frosting, but if it’s cracked beyond repair, cube the cake for trifle recipes. No waste here!

How do I keep cake rolls from cracking?

To prevent cake rolls from cracking, roll them in a tea towel as soon as they come out of the oven. The heat and moisture will keep the sponge’s crumb intact. Don’t let the cake cool completely before unrolling it, though, or it can crack. Also, avoid overbaking the cake roll because a dry cake roll won’t have enough moisture to remain pliable and will break. Lastly, make sure you’re using the right size pan. A bigger pan will make the cake roll thinner, and a thin cake is prone to cracking.

What are the best fillings for cake rolls?

The best fillings for cake rolls are light, fluffy and easily spreadable. Stabilized whipped cream (regular whipped cream won’t hold), well-whipped cream cheese frosting, buttercream, chocolate ganache, and jams or preserves are the best fillings for cake rolls.

Can I make and freeze cake rolls in advance?

You can make and freeze certain cake rolls in advance. Any unfrosted cake roll, whether filled with buttercream or jam, can be made ahead of time, wrapped tightly in storage wrap and frozen for up to two months. Thaw overnight in the fridge and then decorate. Fillings like stabilized whipped cream, ganache and cream cheese frosting do not freeze well. Also, wait to decorate the cake roll until it’s thawed; otherwise, you’ll ruin the design when you wrap it for freezing.
