Vegan Rocky Road Peppermint Fudge

   Line a 8-in. square pan with foil. In a large microwave-safe bowl, melt chocolate chips and coconut milk, stirring after 1 minute and every 30 seconds thereafter. Stir in instant coffee, let stand until dissolved. Add peanuts, marshmallows and vanilla extract Spread into prepared pan. Sprinkle with crushed peppermint candies and sprinkles. Refrigerate until firm.

   Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.
