Super Spud Brownies
These moist and cakelike brownies came from my mom’s old cookbook. Mashed potatoes may seem like an unusual ingredient, but they work beautifully—this recipe took first place at a local festival. —Marlene Gerer, Denton, Montana
Ingredients
- 3/4 cup mashed potatoes
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/2 cup canola oil
- 2 large eggs, room temperature, lightly beaten
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup chopped pecans, optional
- Confectioners' sugar
Directions

1In a large bowl, combine the mashed potatoes, sugars, oil, eggs and vanilla. Combine the flour, cocoa, baking powder and salt; gradually add to potato mixture. Fold in pecans if desired. Transfer to a greased 9-in. square baking pan.

2Bake at 350° until a toothpick inserted in the center comes out clean, 23-27 minutes. Cool on a wire rack. Dust with confectioners' sugar. Cut into bars.
