Lucy Wang’s Watermelon Soju

Directions

   Cut the watermelon in half. Using a round spoon, scoop out half spheres in a clockwise motion, then set aside. Scoop the remaining watermelon and pour it into a blender.

   In the blender, add 1 cup of ice, 1/2 cup of soju and 1/4 cup of Sprite; blend until smooth.

   Rehydrate mint leaves in ice-cold water.

   Fill the watermelon bowl with ice and blended watermelon soju you just made.

   Garnish with the watermelon half spheres you scooped from earlier and fresh mint leaves.
