  • Dark sweet cherries are larger and firmer than sour cherries. While sweet cherries are popular and delicious for eating out of hand, they’re often too sweet for making desserts. Sour cherries are generally considered better for baking. However, sweet cherries in a dessert recipe can allow you to get by with using less sugar.
  • When making the filling, be sure to gently fold in the whipped topping just until it’s blended. The topping will deflate if it’s overhandled.
