Copycat Pronto Pups
Pronto Pups look similar to corn dogs, but the batter is made with rice flour, corn flour and cornmeal, which gives them a different texture. They've been a fixture at Minnesota and Kansas state fairs since the 1940s and most fair-goers have strong opinions about whether Pronto Pups or corn dogs are superior, but both are delicious dogs in their own right. Ingredients
- 3/4 cup yellow cornmeal
- 3/4 cup corn flour
- 1/4 cup white rice flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 4 large eggs, lightly beaten
- 1 cup whole milk
- 10 wooden skewers
- 10 hot dogs
- Oil for deep-fat frying
- Prepared mustard, optional

1In a large bowl, combine cornmeal, flours, baking powder, salt and baking soda. Stir in eggs and milk to make a batter; let stand 4 minutes. Insert sticks into hot dogs; dip into batter.

2In an electric skillet or deep-fat fryer, heat oil to 375°. Fry corn dogs, a few at a time, until golden brown, 5-6 minutes, turning occasionally. Drain on paper towels. Serve with mustard, if desired.
