But they’ll still puff and expand a little, so choose simple cookie cutters with recognizable holiday shapes. Think gingerbread people, trees, snowmen and ornaments. Step 1: Make the cookie dough

In a large bowl, cream together the shortening, softened butter and brown sugar until the mixture is light and fluffy, five to seven minutes. Add the egg, molasses and vinegar.

In another bowl, combine the flour, cocoa, baking powder, ginger, cinnamon and cloves, and gradually add it to the creamed mixture. Mix well.

Step 2: Chill the dough

Cover and refrigerate the cookie dough until it’s easy to handle, about four hours or overnight.

Step 3: Roll and cut the cookies

Preheat the oven to 375°F. On a lightly floured surface, roll the gingerbread cookie dough to 1/8-inch thickness. Cut out shapes with floured 2-1/2-inch cookie cutters. Place the cookies 1 inch apart on ungreased baking sheets.

Step 4: Bake the cookies

Bake the cookie cutouts until the edges are firm, seven to nine minutes. Remove the cookies to wire racks to cool completely.

  • Give them a dip: Once the cookies are cool, dip them in melted chocolate: white, milk or semisweet. If you’d like, add sprinkles or candies before the chocolate sets.
  • Create cookie sandwiches: Spread frosting on the back of one cookie and press it together with a second cookie so the frosting reaches the edges. Roll the edges in colorful sprinkles for extra color.
  • Make ice cream sandwiches: Spoon softened vanilla or another flavor ice cream between two gingerbread cutouts. Wrap the ice cream sandwiches in storage wrap and pop them in the freezer to firm up.

The best bet is to check the edges: When the edges are set and firm, the cookies are done. If they seem too delicate to move, let them rest on the cookie sheet for five minutes before transferring them to a wire rack.
