If you invite me to a Cinco de Mayo party, I’ll be there and I’ll bring my self-proclaimed famous black beans (the secret is bacon fat and dark Mexican beer). Even though I didn’t move to Texas until I was 9 years old and knew little about Mexican food, I immediately connected with the Mexican flavors and Tex-Mex food abundant in my new home state. My family started celebrating Cinco de Mayo, giving me the perfect reason to learn more about what the day represented.

Cinco de Mayo is actually more of a Mexican American and American holiday, though it is an important date in Mexico’s history. On May 5, 1862, the Mexican army defeated the French in the Battle of Puebla, despite being outnumbered and considerably less equipped. This morale-boosting victory is still celebrated in Puebla, but it gained wider popularity in the U.S. via Mexican immigrants in California in the late 1800s. It’s become a day to celebrate Mexican culture and heritage, including its food.

This means that the menu at a Cinco de Mayo party is often a mix of traditional and Mexican-inspired dishes. Here, you’ll find a similar assortment. There are tacos, margaritas and guacamole, but also plenty of Cinco de Mayo dinners that aren’t tacos, like sopes, ceviche and nacho bakes. To end the party on a sweet note, try a tres leches cake or a flan recipe, both of which are fantastic make-ahead desserts.
