Zuccamole (Zucchini Guacamole)

No avocados? No problem. This creamy zucchini guacamole transforms humble zucchini into a fresh dip that's surprisingly similar to the real thing.
Ingredients
- 2 medium zucchini, halved lengthwise
- 1 tablespoon lime juice
- 3/4 teaspoon kosher salt
- 3/4 teaspoon garlic powder
- 3/4 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1/4 cup olive oil
- 2 tablespoons finely chopped red onion
- 1 to 2 tablespoons minced fresh cilantro
- 1 tablespoon chopped seeded jalapeno pepper, optional
Directions
- In a large saucepan, place a steamer basket over 1 in. of water. Place zucchini in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, until tender, 15-20 minutes. Cool completely in the refrigerator.
- Place zucchini, lime juice, salt, garlic and onion powders in a food processor. While processing, gradually add oil in a steady stream, until mixture is emulsified and smooth.
- Stir in onion, cilantro and jalapeno, if using.
