Zuccamole (Zucchini Guacamole)

No avocados? No problem. This creamy zucchini guacamole transforms humble zucchini into a fresh dip that's surprisingly similar to the real thing.

Ingredients

  • 2 medium zucchini, halved lengthwise
  • 1 tablespoon lime juice
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 cup olive oil
  • 2 tablespoons finely chopped red onion
  • 1 to 2 tablespoons minced fresh cilantro
  • 1 tablespoon chopped seeded jalapeno pepper, optional

Directions

  1. In a large saucepan, place a steamer basket over 1 in. of water. Place zucchini in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, until tender, 15-20 minutes. Cool completely in the refrigerator.
  2. Place zucchini, lime juice, salt, garlic and onion powders in a food processor. While processing, gradually add oil in a steady stream, until mixture is emulsified and smooth.
  3. Stir in onion, cilantro and jalapeno, if using.
