Yankee Doodle Casserole

Yankee Doodle went to town, riding on a pony, stuck a feather in his cap and baked this casserole-y.

Ingredients

  • 4 tablespoons butter, divided
  • 1/4 cup finely chopped onion
  • 1 pound hot dogs, cut into 1/2-in. pieces
  • 1 can (10-1/2 ounces) condensed cheddar cheese soup, undiluted
  • 1 can (10-1/2 ounces) condensed tomato soup, undiluted
  • 1 can (14-1/2 ounces) petite diced tomatoes
  • 1 cup whole milk
  • 1/2 teaspoon pepper
  • 2-1/2 cups uncooked penne pasta
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup panko bread crumbs

Directions

  1. Preheat the oven to 425°. Grease a 13x9-in. baking dish; set aside.
  2. Heat 2 tablespoons butter in a large skillet over medium heat. Add onion and hot dog slices; cook 5-8 minutes or until onions are soft and hot dogs are browned.
  3. In a large bowl, whisk together condensed soups, tomatoes, milk and pepper. Stir in the onion and hot dog mixture and uncooked pasta. Transfer the mixture to the prepared baking dish. Cover with foil; bake 40-45 minutes or until the pasta is al dente.
  4. Meanwhile, in a small microwave-safe dish, melt the remaining 2 tablespoons butter. Stir in the bread crumbs.
  5. Uncover the baking dish. Top with shredded cheese and bread crumb mixture. Bake, uncovered, 5-8 minutes or until the cheese is melted and the bread crumbs are golden brown. Let cool 5 minutes.
