White Chocolate Raspberry Cookies

Sweet-tart white chocolate raspberry cookies are actually better with frozen berries, so you can make them any time of year.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 2 large eggs, room temperature
  • 1-1/2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1-1/2 cups frozen unsweetened raspberries
  • 1 cup white baking chips

Directions

  1. In a large bowl, cream butter, shortening and sugars until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in raspberries and white chocolate chips.
  2. Scoop dough by tablespoonfuls onto parchment-lined baking sheets. Bake at 350° until golden brown, 13-15 minutes. Cool cookies for 1-2 minutes before removing from pans to wire racks to cool completely.
