Vietnamese Garlic Noodles

An unlikely combo of fish sauce and Parmesan makes these Vietnamese garlic noodles hard to stop eating.

Ingredients

  • 1/2 cup butter
  • 20 garlic cloves, minced
  • 2 teaspoons fish sauce
  • 2 teaspoons oyster sauce
  • 2 teaspoons sugar
  • 1 teaspoon Maggi seasoning sauce
  • 12 ounces fresh chow mein noodles or ramen noodles
  • 1/2 cup grated Parmesan cheese
  • Thinly sliced green onions, for garnish

Directions

  1. Melt butter in a saucepan or wok over medium heat. Add garlic and cook for 2 minutes, being careful not to brown. Add fish sauce, oyster sauce, sugar and Maggi seasoning. Stir to combine, then remove from heat.
  2. Meanwhile, bring a pot of water to boil. Cook fresh chow mein noodles according to package directions. Drain; reserving 1/2 cup cooking water.
  3. Add pasta to garlic mixture; return to stove over medium heat. Add parmesan and reserved pasta water; stir until heated through and sauce is creamy. Top with green onions before serving.
