Vegan Creme Brulee

This vegan creme brulee skips eggs and cream but keeps the most important part: that crackly, caramelized sugar crust.

Ingredients

  • 1 cup sugar
  • 1/2 cup cornstarch
  • 4 cups canned coconut milk
  • 1 tablespoon vanilla bean paste
  • Brown sugar

Directions

  1. In a small saucepan, whisk together sugar and cornstarch. Gradually stir in coconut milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in vanilla. Pour into 8 5- or 6-oz. shallow broiler-safe ramekins. Refrigerate until cold.
  2. Place ramekins on a baking sheet; let stand at room temperature 15 minutes. Preheat broiler. Sprinkle custards evenly with 1-2 teaspoons brown sugar each. Broil 8 in. from heat until sugar is caramelized, 3-4 minutes.
  3. If using a creme brulee torch, sprinkle with remaining sugar. Heat sugar with the torch until caramelized. Serve immediately.
