Ube Brownies

With a striking purple crumb and pockets of melty white chips, these ube brownies will be the most eye-catching bars on the dessert table.

Ingredients

  • 1-1/2 cups packed brown sugar
  • 1/2 cup butter, melted
  • 2 large eggs, lightly beaten, room temperature
  • 1 teaspoon ube extract
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (6 ounces) white baking chips

Directions

  1. Line a 9-in. square baking pan with parchment, letting ends extend up sides.
  2. In a large bowl, combine the brown sugar, butter, eggs and ube just until blended. Combine the flour, baking powder and salt; add to brown sugar mixture. Stir in white baking chips.
  3. Spread mixture into prepared pan. Bake at 350° until a toothpick inserted in the center comes out clean, 23-25 minutes. Cool in pan on a wire rack. Lifting with parchment, remove from pan. Cut into bars.
