Tequila Honey Bee

Take a classic bee's knees cocktail and add a hint of mezcal and a solid pour of tequila, and you have a smoky tequila honey bee.

Ingredients

  • 1/4 cup honey
  • 1/4 cup hot water
  • 1/4 ounce mezcal
  • Ice cubes
  • 2 ounces blanco tequila
  • 3/4 ounce lemon juice
  • 3/4 ounce honey syrup
  • Lemon peel, optional

Directions

  1. Place honey and hot water in a jar or small bowl. Stir until dissolved. Let cool to room temperature. Measure out 3/4 ounces; set aside. Reserve the remaining syrup for another use.
  2. Pour the mezcal into a coupe glass. Tilt and swirl the glass to coat the inside; pour out.
  3. Fill a cocktail shaker with ice. Add tequila, lemon juice and 3/4 ounce honey syrup. Shake vigorously for 10-15 seconds or until the outside is very cold.
  4. Strain the liquid into the chilled coupe glass. Garnish with lemon peel, if desired.
