Tam To’s Broken Rice with Lemongrass Pork Chops & Shrimp Bean Curd Rolls

Vietnamese broken rice is a humble dish made from fractured rice grains, but it’s filled with flavors of comfort. Growing up, this was a meal I ate often with my grandpa, and my family would prepare a huge batch to enjoy around the table. Traditionally, it’s served with a variety of sides, but my favorite combination is lemongrass pork chops and shrimp bean curd rolls. This version keeps all the classic flavors while making it easy to prepare at home using the air fryer. —Tam To, Los Angeles, California
Ingredients
- 1/2 cup chopped green onions
- 2 tablespoons minced garlic
- 2 tablespoons oyster sauce
- 1 tablespoon lemongrass, minced
- 1 tablespoon fish sauce
- 1 tablespoon packed brown sugar
- 1 tablespoon oil
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 teaspoon monosodium glutamate, optional
- 1 tablespoon Knorr Maggi seasoning, optional
- 2 bone-in pork chops (about 1-1/2-in. thick)
- 2 cups broken rice
- SHRIMP BEAN CURD ROLLS:
- 1 cup minced shrimp
- 1 tablespoon minced garlic
- 2 teaspoons sugar
- 1 teaspoon fish sauce
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 3 bean curd wrappers, cut into 3x8-in slices
- SCALLION OIL:
- 1/4 cup olive oil, heated
- 1/4 cup chopped green onions
- Pinch salt
- FISH SAUCE:
- 1/2 cup sugar
- 1/2 cup boiling water
- 1/4 cup lime juice
- 1/4 cup fish sauce
- 6 to 7 Thai chili peppers, minced
- 1 tablespoon minced garlic
- GARNISH:
- Sliced cucumber
- Sliced tomatoes
- Pickled carrots
- Sliced daikon radish
Directions
- In a shallow dish, combine the first 9 ingredients (plus monosodium glutamate and Maggi seasoning, if using) until well combined. Flatten pork chops slightly, and cut a slit in the side of each. Place pork chops in marinade for 30-60 minutes.
- Meanwhile, prepare broken rice according to package directions.
- Preheat air fryer to 400°. In a small bowl, combine shrimp, garlic, sugar, fish sauce, pepper and salt together. Position a bean curd wrapper with 1 point toward you. Place about 2 tablespoons shrimp mixture in the center. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point; press to seal. Repeat with remaining wrappers and filling. Place rolls in a single layer in preheated air fryer. Cook until shrimp is done and wrapper is a tan color, about 5 minutes on each side.
- For the scallion oil, heat oil in a small saucepan. Place green onions and salt in a small bowl. Pour hot oil over top; let stand.
- In a small bowl, combine all fish sauce ingredients.
- Remove pork chops form marinade; discard marinade. Place pork chops in a single layer in air-fryer basket. Cook until a thermometer inserted in pork reads 145°, 8-10 minutes on each side.
- To serve, place 1 pork chop and half the rice and shrimp rolls on a plate. Garnish with veggies, as desired. Drizzle with scallion oil; serve with fish sauce.
