Despite their name, salt potatoes aren't overloaded with salt! They have a thin salty crust that forms when they're boiled in super salty water. This Central New York dish originated in Syracuse, which was nicknamed "Salt City" in the 1800s because of the local salt industry. —Debby Harden, Lansing, Michigan
Ingredients
- 3 pounds small Yukon Gold potatoes
- 2 cups kosher salt
- 1/2 cup unsalted butter, melted
Directions
- In a large saucepot, combine potatoes, salt and 8 cups of water. Cover and bring to a boil over high heat. Reduce heat to medium, and continue cooking until potatoes are fork-tender, 20-25 minutes longer.
- Drain potatoes; return to pan and toss with butter.
