Stuffed Croissant French Toast with Marshmallow Creme

Stuffed croissant French toast with marshmallow creme is breakfast bliss. Day-old croissants with a sweet gooey center make any day feel like a party.
Ingredients
- 1-1/2 cups half-and-half cream
- 3 large egg yolks
- 3 tablespoons brown sugar
- 2 teaspoons vanilla extract
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 4 croissants, split
- 4 ounces cream cheese, softened
- 1 cup marshmallow fluff
- Optional toppings: Butter, maple syrup, fresh berries and confectioners' sugar
Directions
- In a shallow dish, whisk together the first 7 ingredients. Preheat a greased griddle over medium heat.
- Dip croissant halves into egg mixture, letting them soak 5-10 seconds on each side. Let excess drain off. Cook on griddle until golden brown on both sides.
- In a bowl, beat cream cheese until smooth. Add marshmallow fluff until well combined.
- To serve, place one piece of French toast on plate. Top with a dollop of marshmallow filling and a second slice of French toast. If desired, drizzle with maple syrup and top with fresh berries and confectioners' sugar.
