Stuffed Croissant French Toast with Marshmallow Creme

Stuffed croissant French toast with marshmallow creme is breakfast bliss. Day-old croissants with a sweet gooey center make any day feel like a party.

Ingredients

  • 1-1/2 cups half-and-half cream
  • 3 large egg yolks
  • 3 tablespoons brown sugar
  • 2 teaspoons vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 4 croissants, split
  • 4 ounces cream cheese, softened
  • 1 cup marshmallow fluff
  • Optional toppings: Butter, maple syrup, fresh berries and confectioners' sugar

Directions

  1. In a shallow dish, whisk together the first 7 ingredients. Preheat a greased griddle over medium heat.
  2. Dip croissant halves into egg mixture, letting them soak 5-10 seconds on each side. Let excess drain off. Cook on griddle until golden brown on both sides.
  3. In a bowl, beat cream cheese until smooth. Add marshmallow fluff until well combined.
  4. To serve, place one piece of French toast on plate. Top with a dollop of marshmallow filling and a second slice of French toast. If desired, drizzle with maple syrup and top with fresh berries and confectioners' sugar.
