S’mores Icebox Cake

Not that it’s a competition, but this s’mores icebox cake will be the standout at the summer potluck. Don’t tell anyone you barely had to lift a finger.

Ingredients

  • 1 pound semisweet baking chocolate bars, chopped
  • 1-3/4 cups heavy whipping cream
  • 1 package (3-1/2 ounces) instant vanilla pudding mix
  • 1-1/4 cups cold whole milk
  • 1 block (8 ounces) cream cheese, softened
  • 1 jar marshmallow fluff (7.5 ounces)
  • 1 carton (16 ounces) frozen whipped topping, thawed
  • 2 sleeves whole graham crackers
  • Optional: Miniature marshmallows, chocolate shavings, crumbled graham crackers

Directions

  1. Place chocolate in a medium bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth; set aside.
  2. Meanwhile, in a small bowl, whisk milk and pudding mix 2 minutes. Let stand until soft-set, about 2 minutes.
  3. In a large bowl, beat cream cheese until smooth. Add prepared pudding and marshmallow fluff until smooth. Fold in whipped topping.
  4. Arrange one sleeve of graham crackers in a 13x9-in. baking dish. Spread one half of the marshmallow filling over the crackers. Spoon half the ganache over filling. Repeat layers. Refrigerate at least 4 hours or overnight.
  5. Before serving, top with mini marshmallows, chocolate shavings, and crumbled graham crackers, if desired.
