Slow-Cooker Harissa Chicken

With spice and lots of sauce, slow-cooker harissa chicken makes a weeknight protein feel special.
Ingredients
- 1 small onion, chopped
- 2 pounds boneless skinless chicken breasts
- 1/4 cup harissa chili paste
- 3 tablespoons tomato paste
- 1 teaspoon salt
- 1 can (13.66 ounces) coconut milk
- 3 tablespoons cornstarch
- Hot cooked rice
- Sliced green onion and sesame seeds, for garnish
Directions
- In a 4- or 5- qt. slow cooker, add onions and chicken. In a small bowl, combine harissa, tomato paste and salt. Spread over chicken.
- Cover; cook on high 2-3 hours or low 4-5 hours. Remove chicken to a cutting board; use forks to shred. Place shredded chicken back in the slow cooker.
- In a small bowl, whisk together coconut milk and cornstarch until smooth. Stir mixture into the sauce. Cook for an additional 25 minutes or until the sauce has thickened.
- Serve chicken over rice; garnish with green onions and sesame seeds.
