Slow-Cooker Harissa Chicken

With spice and lots of sauce, slow-cooker harissa chicken makes a weeknight protein feel special.

Ingredients

  • 1 small onion, chopped
  • 2 pounds boneless skinless chicken breasts
  • 1/4 cup harissa chili paste
  • 3 tablespoons tomato paste
  • 1 teaspoon salt
  • 1 can (13.66 ounces) coconut milk
  • 3 tablespoons cornstarch
  • Hot cooked rice
  • Sliced green onion and sesame seeds, for garnish

Directions

  1. In a 4- or 5- qt. slow cooker, add onions and chicken. In a small bowl, combine harissa, tomato paste and salt. Spread over chicken.
  2. Cover; cook on high 2-3 hours or low 4-5 hours. Remove chicken to a cutting board; use forks to shred. Place shredded chicken back in the slow cooker.
  3. In a small bowl, whisk together coconut milk and cornstarch until smooth. Stir mixture into the sauce. Cook for an additional 25 minutes or until the sauce has thickened.
  4. Serve chicken over rice; garnish with green onions and sesame seeds.
