Slow-Cooker Collard Greens

This easy slow-cooker collard greens recipe combines fresh greens with smoked ham hock to make enough for a crowd.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1-1/2 cups water
  • 2 smoked ham hocks
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 pound collard greens
  • 1 tablespoon cider vinegar
  • Dash hot pepper sauce

Directions

  1. In a medium skillet, heat oil over medium heat. Cook onion until tender, 4-5 minutes. Add garlic, cook one minute longer. Transfer to a 6-qt. slow cooker. Add chicken broth, water, ham hock, salt, pepper and crushed red pepper flakes.
  2. Wash collards thoroughly. Remove thick stems. Stack and roll up collards, slice into 1/2-in.-thick strips. Add to slow cooker; cook until tender, 6-8 hours, stirring occasionally.
  3. Remove ham hock, remove meat from bones; discard bones and fat. Return meat to the slow cooker, along with cider vinegar and hot sauce.
