Slow-Cooker Chicken Piccata

Slow-cooker chicken piccata is an easy-to-make dish that your whole family will love.
Ingredients
- 1 tablespoon olive oil
- 2 pounds boneless skinless chicken breasts, sliced in half lengthwise
- Salt and pepper to taste
- 1 cup reduced-sodium chicken broth
- 1/2 cup dry white wine
- 1/2 cup freshly squeezed lemon juice
- 6 garlic cloves, smashed
- 3 tablespoons capers, drained
- 2 tablespoons cornstarch
- 2 tablespoons unsalted butter
- Minced fresh parsley, for garnish
Directions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Place chicken in the skillet; cook until browned, 2-3 minutes per side.
- In a slow cooker, stir together broth, white wine, lemon juice, garlic and capers. Add chicken. Cook on low 3-4 hours or until an instant-read thermometer inserted into the center of the chicken breast reads 165°.
- Transfer chicken to a plate; cover.
- Increase slow cooker temperature to high. Remove 1/2 cup broth to a glass measuring cup or bowl; stir in cornstarch until dissolved. Add mixture to the slow cooker; stir. Cover; cook 10-15 minutes or until the sauce is slightly thickened. Stir in butter until melted.
- Transfer chicken to plates; pour sauce on top. Garnish with parsley to serve.
