Salted Caramel Banana Bread

This salted caramel banana bread has a slight twist—it’s baked upside down!
Ingredients
- 1/3 cup packed brown sugar
- 2 tablespoons butter, melted
- 1/4 teaspoon sea salt
- 1 small banana, sliced lengthwise
- BATTER:
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed ripe bananas (about 3 medium)
- 1/2 cup egg substitute
- 1/2 cup canola oil
- 1/2 cup fat-free sour cream
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350°. In a greased and floured 9x5-in. loaf pan, combine brown sugar, butter and salt. Arrange two slices of banana over top, cut sides up; set aside.
- In a large bowl, combine the flour, sugar, baking soda and salt. Combine the bananas, egg substitute, oil, sour cream and vanilla; stir into the dry ingredients just until moistened.
- Pour into prepared pan. Bake until a toothpick inserted in the center comes out clean, 55-65 minutes. Let stand 10 minutes before inverting onto a serving plate.
