Salted Caramel Banana Bread

This salted caramel banana bread has a slight twist—it’s baked upside down!

Ingredients

  • 1/3 cup packed brown sugar
  • 2 tablespoons butter, melted
  • 1/4 teaspoon sea salt
  • 1 small banana, sliced lengthwise
  • BATTER:
  • 1-1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/2 cup egg substitute
  • 1/2 cup canola oil
  • 1/2 cup fat-free sour cream
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°. In a greased and floured 9x5-in. loaf pan, combine brown sugar, butter and salt. Arrange two slices of banana over top, cut sides up; set aside.
  2. In a large bowl, combine the flour, sugar, baking soda and salt. Combine the bananas, egg substitute, oil, sour cream and vanilla; stir into the dry ingredients just until moistened.
  3. Pour into prepared pan. Bake until a toothpick inserted in the center comes out clean, 55-65 minutes. Let stand 10 minutes before inverting onto a serving plate.
