Raspberry Logs

These pale pink raspberry log cookies bursting with berry flavor, and studded with chocolate chips.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup confectioners' sugar, plus additional for rolling
  • 1/2 ounce freeze-dried raspberry powder
  • 2-1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup miniature semisweet chocolate chips

Directions

  1. In a large bowl, cream butter and sugar until light and fluffy. Add mascarpone and vanilla until well combined. In a small bowl, whisk together confectioners' sugar and raspberry powder, beat into mixture.
  2. In a separate bowl, whisk together flour and salt; gradually add to creamed mixture and mix well. Stir in chocolate chips.
  3. Shape tablespoons of dough into 2-in.-long logs. Place 2 in. apart on parchment-lined baking sheets.
  4. Bake at 375° for 9-10 minutes or until lightly browned. Roll slightly warm cookies in confectioners' sugar; cool on wire racks.
