Prosciutto-Wrapped Figs in a Blanket

These prosciutto-wrapped figs in a blanket strike the perfect sweet-and-savory balance with jammy figs, creamy goat cheese, crispy prosciutto and a drizzle of balsamic glaze. They look fancy but come together in just 30 minutes.

Ingredients

  • 12 fresh figs, halved
  • 12 thin slices prosciutto
  • 4 ounces fresh goat cheese
  • 2 tablespoons balsamic glaze
  • Freshly cracked black pepper

Directions

  1. Slice figs in half lengthwise. Press a deep indentation in center of each with your thumb or with the end of a wooden spoon handle. Fill with cheese. Cut each slice of prosciutto in half lengthwise; wrap a piece around each fig.
  2. Place on a foil-lined baking pan, cut sides down. Bake, uncovered, at 400° for 10 minutes. Turn and bake 2-3 minutes longer, or until browned.
  3. Drizzle with balsamic glaze and sprinkle with freshly cracked black pepper.
