Celebrate the start of pool season with this creamy ranch-flavored poolside dip loaded with vegetables. It's perfect for your next summer get-together (pool optional).
Ingredients
- 1 package (8 ounces) cream cheese, softened
- 3/4 cup plain Greek yogurt
- 1 package (1 ounce) ranch dip mix
- 1 package (12 ounces) frozen Southwestern corn, thawed
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 1 can (4 ounces) chopped green chiles
- 1/2 cup chopped sweet peppers
- 1/4 cup chopped green onions
- Minced fresh parsley, for garnish
- Chips, raw vegetables and crackers, for dipping
Directions
- In a large bowl, beat cream cheese and Greek yogurt until smooth, 2-3 minutes. Beat in ranch dip mix. Fold in corn, olives, green chiles, peppers and green onion.
- Transfer to a serving dish; garnish with parsley. Serve immediately or cover and refrigerate until ready to serve.
