Pesto Grilled Cheese

Pesto grilled cheese takes the classic sandwich up a notch with layers of melty mozzarella, juicy tomatoes and herby pesto.

Ingredients

  • 8 slices sourdough bread
  • 1/2 cup prepared pesto
  • 8 slices part-skim mozzarella cheese
  • 2 plum tomatoes, thinly sliced
  • 4 tablespoons butter, softened

Directions

  1. Preheat panini maker or indoor electric grill. Spread pesto over one side of each piece of bread. Top each with a slice of cheese. Layer tomato slices on four of the slices. Top with the other half of cheese slices.
  2. Spread softened butter over the outside of sandwiches. In batches, cook, covered, 3-4 minutes or until bread is browned and cheese is melted. Serve immediately.
