Peanut Butter Miso Cookies

Sweet but savory, tender but crunchy, and easy but impressive, peanut butter miso cookies shake up the status quo.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/3 cup packed dark brown sugar
  • 1/3 cup sugar
  • 3 tablespoons light miso paste
  • 2 teaspoons light corn syrup
  • 1 large egg, room temperature
  • 1 teaspoon baking soda
  • 2 teaspoons warm water (110° to 115°)
  • 1-1/2 cups all-purpose flour
  • 1/2 cup finely chopped unsalted peanuts
  • 1 cup sugar, optional

Directions

  1. Preheat oven to 325°. In a large bowl, cream butter, peanut butter, sugars, miso and corn syrup. Beat in egg. In a small bowl, combine water and baking soda. Beat into creamed mixture with flour. Stir in peanuts.
  2. Scoop dough by tablespoonfuls; place 2 in. apart on parchment-lined baking sheets. Refrigerate 20 minutes.
  3. If desired, flatten with a fork, creating a cross-hatch pattern. Alternatively, roll cookies in sugar before baking.
  4. Bake until edges are set, 10-12 minutes. Remove to wire racks to cool.
