Peach Cookies

These peach cookies look like real peaches and taste like them too! Peach schnapps enhances the peach flavor throughout, including in the peach preserves filling.
Ingredients
- 1 cup butter, softened
- 1 cup confectioners' sugar
- 2 large eggs, room temperature
- 2 teaspoons grated lemon zest
- 1 teaspoon vanilla extract
- 1/3 cup sour cream
- 1 tablespoon peach schnapps liqueur
- 3-2/3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- FILLING:
- 1/2 cup peach preserves
- 1 tablespoon peach schnapps liqueur
- DECORATING:
- 2/3 cup peach schnapps liqueur
- Red and yellow food coloring
- Sugar for coating
- Optional: Green candy or frosting leaves
Directions
- In a large bowl, cream butter and confectioners' sugar until light and fluffy, 3-4 minutes. Beat in eggs, lemon zest and vanilla. Add sour cream and peach schnapps. Whisk flour, baking powder and salt; gradually beat into creamed mixture.
- With lightly greased hands, roll dough into 3/4-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly. Bake at 350° for 13-15 minutes or until firm. Remove to wire racks.
- While cookies are warm, use a sharp knife and small spoon to cut and scoop out about 1/2 teaspoon of crumbs from the bottom of each cookie; set crumbs aside for filling. Cool cookies completely.
- In a small bowl, combine the filling ingredients; stir in reserved crumbs. Spoon into 2 cookies; spread a thin amount of filling on cookie bottoms and press together to form a peach. Repeat with remaining cookies and filling.
- To decorate, divide peach schnapps into 2 small bowls. Add red food coloring to 1 bowl and yellow food coloring to the other. Place sugar into a third dish.
- Dip half of each cookie sandwich into the yellow mixture, then dip the other half into the red mixture. Immediately roll in sugar. Decorate with a green candy or frosting leaf as desired. Repeat with remaining cookies.
