This miso butter recipe balances salty, sweet and citrusy tastes and flavors in a multipurpose spread that will change your weeknight cooking.
Ingredients
- 1 cup white miso paste
- 1/2 cup sugar
- 1/4 cup mirin (sweet rice wine)
- 1/4 cup rice vinegar
- 1/4 cup grapefruit juice
- 1/2 cup unsalted butter
Directions
- In a small saucepan, combine miso, sugar, mirin, rice vinegar and grapefruit over medium heat. Bring to a simmer; cook, stirring, until liquid has evaporated and mixture has thickened, about 5 minutes. Remove from heat; cool slightly.
- Add butter, 1 tablespoon at a time, stirring until fully incorporated. Store in an airtight container. Refrigerate up to 1 week or freeze up to several months.
