Million Dollar Lasagna

Basic lasagnas have their time and place, but our million-dollar lasagna lays on the luxury with a trio of cheeses plus ground beef, pork, bacon and a medley of vegetables.
Ingredients
- 1 pound ground beef
- 1/2 pound bulk Italian sausage
- 1 small onion, chopped
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 cup sliced fresh mushrooms
- 1 can (14-1/2 ounces) vegetable or chicken broth
- 1 jar (7 ounces) julienned oil-packed sun-dried tomatoes, drained
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1 tablespoon minced fresh basil
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon pepper
- 6 bacon strips, cooked and crumbled
- 1 jar (24 ounces) marinara sauce
- ASSEMBLY:
- 12 no-cook lasagna noodles
- 3 cups shredded part-skim mozzarella cheese
- 1 cup crumbled tomato and basil feta cheese or feta cheese
- Grated Parmesan cheese, optional
Directions
- Preheat oven to 350°. In a Dutch oven, cook beef, sausage and onion in oil over medium heat 8-10 minutes or until meat is no longer pink, breaking up meat into crumbles. Add garlic; cook 1 minute. Remove with a slotted spoon to a bowl.
- To the same Dutch oven, add mushrooms; cook and stir until tender. Stir in broth, spinach, sun-dried tomatoes, basil, nutmeg and pepper; bring just to a boil. Reduce heat; simmer 5 minutes, stirring occasionally. Stir in marinara sauce, reserved meat mixture and bacon crumbles; remove from heat.
- Spread 1 cup sauce into a greased 13x9-in. baking dish. Layer with 3 noodles and 2/3 cup mozzarella cheese. Repeat layers 3 times. Top with remaining sauce and mozzarella cheese. Sprinkle with feta cheese.
- Bake, covered, 40 minutes. Bake, uncovered, 10 minutes longer or until noodles are tender. Let stand 10 minutes before serving. If desired, sprinkle with Parmesan cheese before serving.
