Mexican Tuna Salad

Upgrade plain old tuna by making this bold and slightly spicy Mexican tuna salad with corn and black beans.

Ingredients

  • 2 cans (5 ounces each) light tuna in water, drained
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup frozen corn kernels
  • 1/4 cup finely chopped sweet red pepper
  • 1/4 cup finely chopped red onion
  • 2 tablespoons plain Greek yogurt
  • 1 medium ripe avocado, peeled
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons fresh cilantro leaves
  • Chips or crackers, for serving

Directions

  1. In a large mixing bowl, combine tuna, black beans, corn, pepper and onion. Set aside.
  2. In a glass measuring cup, mash together avocado, Greek yogurt, lime juice and spices until a chunky paste forms. Add to the tuna mixture; stir to combine. Fold in cilantro. Serve with chips or crackers for dipping.
