Mexican Tuna Salad

Upgrade plain old tuna by making this bold and slightly spicy Mexican tuna salad with corn and black beans.
Ingredients
- 2 cans (5 ounces each) light tuna in water, drained
- 1/2 cup black beans, rinsed and drained
- 1/4 cup frozen corn kernels
- 1/4 cup finely chopped sweet red pepper
- 1/4 cup finely chopped red onion
- 2 tablespoons plain Greek yogurt
- 1 medium ripe avocado, peeled
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons fresh cilantro leaves
- Chips or crackers, for serving
Directions
- In a large mixing bowl, combine tuna, black beans, corn, pepper and onion. Set aside.
- In a glass measuring cup, mash together avocado, Greek yogurt, lime juice and spices until a chunky paste forms. Add to the tuna mixture; stir to combine. Fold in cilantro. Serve with chips or crackers for dipping.
