Mexican Street Corn Hot Dog

We love Mexican street corn so much that we turned it into a topping with these Mexican street corn hot dogs.
Ingredients
- 1 tablespoon olive oil
- 1 package (10.8 ounces) frozen corn, thawed
- 1/2 cup mayonnaise
- 1/3 cup Cotija cheese, plus more for garnish
- 1/3 cup minced fresh cilantro, plus more for garnish
- 2 green onions, thinly sliced
- 1 jalapeno pepper, seeded and minced
- 2 garlic cloves, minced
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- HOT DOGS:
- 6 hot dogs
- 6 hot dog buns, split
- Chipotle crema, for garnish, optional
Directions
- In a large skillet, heat oil over medium-high heat. Add corn; cook until lightly charred, 10-12 minutes, stirring occasionally. Transfer to a large bowl. Stir in mayonnaise, Cotija cheese, cilantro, green onion, jalapeno, garlic, lime juice, chili powder, smoked paprika, salt and pepper. Set aside.
- To make the hot dogs, heat a stovetop grill pan or outdoor grill to medium heat. Grill the hot dogs until browned, 2-4 minutes per side. Place the split buns on the grill; toast until lightly browned on the edges, 30-60 seconds. Place the grilled hot dogs in buns; top each with street corn. Garnish with chipotle crema, Cotija cheese and cilantro, if desired.
