Marry Me Shrimp Pasta

Ingredients

  • 1 pound uncooked penne pasta
  • 1 pound uncooked shrimp (16-20 per pound), peeled and deveined
  • 4 teaspoons Italian seasoning, divided
  • 1 teaspoon salt, divided
  • 1/2 teaspoon pepper, divided
  • 4 tablespoons unsalted butter, divided
  • 1 small onion, minced
  • 2 garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup all-purpose flour
  • 1-1/2 cups chicken broth or vegetable broth
  • 1/2 cup julienned oil-packed sun-dried tomatoes
  • 1 tablespoon tomato paste
  • 1/2 cup heavy whipping cream
  • 1/2 cup whole milk
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 5 ounces fresh baby spinach, chopped
  • Minced fresh basil, for garnish

Directions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions, reserving 1/4 cup of pasta water. Set aside.
  2. Meanwhile, season the shrimp with 2 teaspoons Italian seasoning, 1/2 teaspoon salt and 1/4 teaspoon pepper. Melt 2 tablespoons of butter in a large skillet over medium heat. Add shrimp; cook until opaque, 4-6 minutes, stirring occasionally. Remove to a plate; tent with foil.
  3. Add the remaining 2 tablespoons of butter to the skillet. Add onion; cook until softened, 4-5 minutes. Add the garlic and red pepper flakes; cook until fragrant, 30-60 seconds. Stir in flour; cook until lightly browned, 1-2 minutes. Slowly whisk in the chicken broth, breaking up any lumps. Add the sun-dried tomatoes, tomato paste, remaining 2 teaspoons Italian seasoning, 1/2 teaspoon salt and 1/4 teaspoon pepper. Reduce the heat to low.
  4. Whisk in cream and milk. Stir in Parmesan cheese until melted. Add spinach; cook until wilted, 2-3 minutes. Add the cooked pasta and reserved pasta water, tossing to combine. Add the shrimp back to the pan; cook until warmed through, 1-2 minutes.
  5. Garnish with additional Parmesan cheese and basil to serve.
