Lunch Lady Brownies

These lunch lady brownies are just like the ones your school cafeteria used to serve. They’re soft and fudgy, offering a taste of nostalgia in every bite.

Ingredients

  • 1-1/2 cups sugar
  • 3 large eggs
  • 3/4 teaspoon vanilla extract
  • 3/4 cup butter, melted
  • 3/4 cup all-purpose flour
  • 1/2 cup baking cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • FROSTING:
  • 1/4 cup baking cocoa
  • 1/4 cup butter, melted
  • 2-1/4 cups confectioners' sugar
  • 2 to 3 tablespoons whole milk

Directions

  1. Preheat oven to 350°. In a large bowl, beat the sugar, eggs and vanilla. Beat in butter. Combine the flour, cocoa, baking powder and salt; gradually add to batter and mix well.
  2. Pour into a greased 13x9-in. baking pan. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool on a wire rack.
  3. For frosting, combine the cocoa and butter. Stir in sugar until smooth, add milk until desired consistency. Frost brownies.
