Lomi Lomi Salmon

Learn how to make lomi lomi salmon, an easy Hawaiian dish of simple salt-cured salmon, tomatoes and onions.

Ingredients

  • Kosher salt (about 5-6 cups)
  • 8 ounces salmon, skinned and deboned
  • 2 plum tomatoes, chopped
  • 1/2 cup chopped onion
  • 1/2 cup thinly sliced green onions

Directions

  1. Add salt to a small baking dish until bottom is covered. Place salmon over salt. Cover with salt until salmon is covered. Cover tightly; refrigerate 24 hours.
  2. Remove salmon from pan; discard salt. Rinse excess salt off salmon. Fill a large bowl with cold water; submerge salted salmon. Refrigerate 3-4 hours.
  3. Place tomatoes, onion and green onion in a medium bowl. Remove salmon from water and cut into bite-size pieces. Cover and refrigerate 8 hours or overnight until flavors have melded.
