Lentil Caviar

Even friends with the most discerning of tastes will do a double-take when they see this lentil caviar on your next party spread.

Ingredients

  • 1/2 cup black lentils
  • 1-1/2 cups water
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon caper juice
  • 1/2 teaspoon red wine vinegar
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper

  • 1 (9 ounce) French bread baguette
  • 2 to 3 tablespoons extra virgin olive oil
  • 1 garlic clove, sliced in half
  • 8 ounces whipped cream cheese
  • Fresh minced chives, for garnish

Directions

  1. Cook lentils according to package directions. Drain excess liquid; set aside.
  2. In a small bowl, whisk together soy sauce, Worcestershire, caper juice and vinegar. Stir in onion powder, garlic powder and pepper. Add lentils; stir to coat. Cover; chill at least one hour.
  3. Meanwhile, preheat the oven to 350°. Slice baguette into 1/2-in. thick slices. Arrange on a sheet pan in a single layer; drizzle with olive oil on both sides. Bake 8-10 minutes or until lightly golden brown. Immediately rub the cut side of the garlic over the toasted bread. Let cool.
  4. When ready to serve, spread a scant tablespoon of cream cheese onto each toasted baguette slice. Top with a generous scoop of lentil caviar; garnish with minced chives. Serve immediately.
