Here’s how to make chocolate-and-coconut-coated Lamington cakes just like the Aussies do—no plane ticket required!

Ingredients

  • 4 large eggs, room temperature
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 2-1/4 cups all-purpose flour
  • 2-1/4 teaspoons baking powder
  • 1-1/4 cups 2% milk
  • 10 tablespoons butter, cubed
  • COATING:
  • 4-2/3 cups confectioners' sugar
  • 1/2 cup baking cocoa
  • 3/4 cup hot water
  • 2 tablespoons butter
  • 5 cups sweetened shredded coconut

Directions

  1. Preheat oven to 350°. In a large bowl, beat eggs on high speed for 5 minutes or until thick and lemon-colored. Gradually add sugar, beating until mixture is light and fluffy. Beat in vanilla. Combine flour and baking powder; gradually add to batter, beating on low speed until smooth.
  2. In a small saucepan, heat milk and butter just until butter is melted. Gradually add to batter; beat just until combined.
  3. Pour into a greased 13x9-in. baking pan. Bake until a toothpick inserted in the center comes out clean, 22-25 minutes. Cool on a wire rack. Remove from pan and cut into 20 pieces.
  4. In top of a double boiler or a metal bowl over hot water, combine confectioners' sugar, cocoa, water and butter. Mix until butter is melted and mixture is smooth. Remove from heat. Keep bowl over water for easier dipping.
  5. Using a fork, dip cake squares into chocolate coating; flip to coat. Allow excess to drip off. Immediately toss in coconut; press to adhere as needed. Let stand until set.
