Kansas City Cheesy Corn

Kansas City cheesy corn is the kind of bubbling, bacon-loaded casserole that captures the classic barbecue potluck feel—it's creamy, cheesy and made for going back for seconds.

Ingredients

  • 6 bacon strips, chopped
  • 1 cup cubed fully cooked ham
  • 5 cups frozen corn (about 24 ounces), thawed
  • 1 package (8 ounces) cream cheese, cubed and softened
  • 1/2 cup half-and-half cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 to 1/2 teaspoon hot pepper sauce, optional
  • 2 cups shredded cheddar cheese, divided
  • Thinly sliced green onions

Directions

  1. Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon, leaving drippings in pan; drain on paper towels.
  2. Add cubed ham. Cook until browned on all sides. Add corn, cream cheese, half-and-half cream, garlic powder, onion powder, salt, pepper and hot pepper sauce (if using). Cook until cream cheese is melted. Fold in 1 cup cheddar and bacon. Transfer to a greased 2-qt. baking dish. Top with remaining 1 cup cheddar.
  3. Bake until top is golden brown and sauce is bubbly, 25-30 minutes. Garnish with sliced green onions before serving.
