Instant Pot Shredded Chicken Tacos

Instant Pot shredded tacos cook in less than 15 minutes, with almost zero effort. Save your energy for creative toppings, or just relish the free time on a busy weeknight.

Ingredients

  • 1 envelope taco seasoning
  • 1 pound boneless skinless chicken breasts
  • 1 cup chunky salsa
  • 1/4 cup chicken broth
  • 8 flour tortillas (8 inches)
  • Optional toppings: Chopped tomatoes, sliced avocado, shredded lettuce, jalapenos slices, shredded cheddar, sour cream and salsa

Directions

  1. Sprinkle taco seasoning over chicken breasts; place in a 6-qt. electric pressure cooker. Combine salsa and chicken broth; pour over chicken. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 6 minutes.
    Quick-release pressure. A thermometer inserted in chicken should read at least 165°.
  2. Remove chicken. When cool enough to handle, shred meat with 2 forks; return to pressure cooker. Place filling on tortillas; if desired, serve with toppings of your choice.
