Impossible Pie

Impossible pie blends together a simple mixture of ingredients to form a creamy custard pie with coconut and vanilla. No pie crust is required—this recipe creates its own crust in the oven!

Ingredients

  • 1/2 cup butter, melted and cooled
  • 1 cup sugar
  • 4 large eggs, room temperature
  • 1/2 cup all-purpose flour
  • 1/8 teaspoon salt
  • 2 cups 2% milk
  • 3/4 cup sweetened shredded coconut
  • 2 teaspoons vanilla extract
  • Confectioners' sugar, optional

Directions

  1. Preheat oven to 350°. Blend together butter, sugar, eggs, flour and salt. Add milk, coconut, and vanilla. Pour into a well-greased deep-dish pie pan.
  2. Bake until a knife inserted in the center comes out clean, 45-50 minutes. If desired, dust with confectioners' sugar and serve.
