Granny Cake

Pineapple juice, pecans and a sweet glaze make this nostalgic granny cake a cinch to prepare.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 can (20 ounces) unsweetened crushed pineapple, undrained
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup unsalted butter
  • 1/2 cup sugar
  • 1 can (5 ounces) evaporated milk
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°. Grease a 13x9-in. cake pan; set aside.
  2. In a large bowl, combine flour, baking soda, baking powder and salt. In a separate large bowl, beat together eggs and crushed pineapple until combined. Beat the pineapple mixture into the dry ingredients just until combined. Pour into the prepared cake pan.
  3. In a small bowl, combine the brown sugar and pecans; sprinkle over the batter. Bake 30-35 minutes or until a toothpick inserted into the center comes out clean.
  4. Meanwhile, to make the glaze, in a large saucepan, combine the butter, sugar and evaporated milk. Bring to a boil, stirring occasionally. Remove from the heat; stir in the vanilla extract.
  5. Let cool 5 minutes. Use a skewer to poke holes evenly throughout the entire cake. Pour the glaze over the hot cake. Once cool, slice to serve.
