French Onion Mashed Potatoes

These French onion mashed potatoes combine caramelized onions and nutty Gruyere cheese with creamy mashed potatoes for one unforgettable side dish.
Ingredients
- 2 tablespoons butter
- 2 medium onions, chopped
- 3/4 teaspoon salt
- POTATOES:
- 3 pounds medium potatoes, peeled and cubed
- 2 teaspoons salt, divided
- 1/2 cup butter, cubed
- 1/2 cup sour cream
- 1 teaspoon coarsely ground pepper
- 1/2 cup whole milk, warmed
- 2 cups shredded Gruyere cheese
- 2 tablespoons minced chives, optional
Directions
- Heat butter in a large skillet over medium heat. Add onions; cook 5-6 minutes or until starting to lightly brown. Reduce heat to medium-low. Cook 35-45 minutes, stirring every 5 minutes, until onions are a deep brown color and very soft. Season with salt.
- Meanwhile, place potatoes in a stockpot; add water to cover. Season water with 1 teaspoon salt; bring to a boil. Reduce heat; cook, uncovered, until tender, 20-25 minutes. Drain and return to pan.
- Add butter, sour cream, remaining 1 teaspoon salt and pepper; beat until blended. Beat in milk. Stir in caramelized onion, Gruyere and chives. Garnish with additional chives and melted butter if desired.
