Egg Wraps

Homemade egg wraps are a naturally high-protein, low-carb and gluten-free alternative to tortillas. They cook up in minutes and are a customizable alternative to pricey store-bought versions.

Ingredients

  • 6 large eggs, room temperature
  • 3 tablespoons water
  • Salt and pepper to taste

Directions

  1. In a blender, combine eggs, water, salt and pepper to taste. Process until smooth and well combined.
  2. Heat a lightly greased 8-in. nonstick skillet over medium heat. Fill a 1/4-cup measure halfway with egg mixture; pour into center of pan. Quickly lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn wrap over and cook until bottom is cooked, 15-20 seconds longer. Remove to a wire rack. Repeat with remaining egg mixture, greasing pan as needed. [When cool, stack wraps between pieces of waxed paper or paper towels.] Fill as desired, serve warm.
