Edible S’Mores Cookie Dough

This s’mores cookie dough is made without raw eggs or raw all-purpose flour, making it safe to eat—no baking required.

Ingredients

  • 2 cups almond flour or 2 cups heat-treated all-purpose flour
  • 1/3 cup black baking cocoa
  • 1 cup unsalted butter
  • 3/4 cup packed brown sugar
  • 1/2 cup sugar
  • 1 tablespoon whole milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1-1/2 cups miniature marshmallows, divided
  • Graham crackers, for dipping

Directions

  1. In a large bowl, beat together butter and sugars until light and fluffy. Add milk, vanilla and salt until combined. In a separate bowl, whisk together almond flour and cocoa. Mix into butter mixture. Fold in chocolate chips and 3/4 cup marshmallows. Cover and refrigerate 10 minutes.
  2. Preheat broiler for high. Place remaining 3/4 cup marshmallows on a parchment-lined baking sheet in an even layer. Broil 1-2 minutes or until golden brown.
  3. Cool slightly, fold into cookie dough. Serve with graham crackers for dipping.
