Oui, you can make almond croissants at home from store-bought croissants. Here’s how to bake them just like a French boulangerie.
Ingredients
- 12 day-old croissants, split
- SIMPLE SYRUP:
- 1/2 cup sugar
- 1/2 cup water
- 1/4 teaspoon almond extract
- FILLING:
- 2 cups almond flour
- 2 cups confectioners' sugar
- 2 large eggs, room temperature
- 1 cup butter, softened
- 1/2 cup sliced almonds
- Confectioners' sugar, for dusting
Directions
- In a small saucepan, combine sugar and water. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 3-5 minutes or until sugar is dissolved, stirring occasionally. Remove from the heat; add almond extract and cool to room temperature.
- Meanwhile, in a large bowl, beat together almond flour, confectioners' sugar and butter until light and fluffy, 2-3 minutes. Add eggs, one at a time, beating well after each addition. Transfer to a large piping bag.
- Place croissant bottoms on a baking sheet. Brush liberally with simple syrup. Pipe a thin layer of almond filling over croissant; replace tops. Pipe remaining filling over croissant tops. Press sliced almonds into topping.
- Bake at 350° for 18-20 minutes. Remove from pans to wire racks to cool. If desired, dust with confectioners' sugar before serving.
